home cooking recipes – easy falafel wrap

Serves 2 – VEGAN – Cooking time 25 minutes

Ingredients
1 packet organic falafel mix
sunflower oil
4 small tortilla wraps
2 tbsp tahini
juice of 1 lemon


For the filling:
1 packet organic falafel mix, prepared as per instructions
1 tomato (chopped into cubes)
small handful of torn peppermint and coriander leaves
A handful of salad leaves
¼ red onion, cut into thin slices
red cabbage pickle

Method:
Empty the falafel sachet into a bowl and add 125ml of boiling water, 1 tbsp sunflower oil and a squeeze of lemon juice. Stir well and leave to rest uncovered for 10 minutes.
Shape into 12 round balls and fry them in a little sunflower oil for 4-5 minutes until golden.
Make a tahini dressing by mixing the tahini, 1 tsp lemon juice and a splash of water.
Assemble the wraps by topping each with the filling ingredients and three falafels. Lastly, drizzle with the tahini dressing.
